This honey-processed Arabica from Crystal Valley brings together the estate’s rocky terrain, its warm Coorg climate, and a slow, carefully managed drying stage. The cup is sweet and citrus-led, with a pomelo character lifted by gentle brown spice. That sweetness comes from the way the coffee is handled on the farm: fully ripe cherries picked by hand, depulped with the mucilage kept intact, and dried slowly on raised beds under a polyhouse for up to ten days. Holding that sticky layer allows the sugars to concentrate and develop a silky, rounded texture in the cup.
Once the coffee reaches 11–12% moisture, it’s rested in jute for at least two months, allowing the flavours to settle and the structure to tighten. The result is a clean, bright and balanced honey-sun-dried lot that reflects both the conditions of Crystal Valley and the technical focus of SICC’s work on low-intervention Arabica.
